YNYSHIR Hall in Machynlleth has retained its highly coveted Michelin Star in the 2011 Michelin Guide.

Under the guidance of Head Chef, Shane Hughes, Ynyshir Hall has become one of the most sought-after spots in the UK to unwind, recharge and enjoy fine cuisine.

On retaining the Michelin Star, awarded for the first time in January 2010, Shane said: “I’m honoured to be awarded a Michelin Star for the second time in a row. Achieving a star is no mean feat and retaining it is equally as tough.

“The accolade rewards the entire team at Ynyshir who have worked hard year round to ensure the dining experience at the hotel was still worthy of a Michelin star.

“We have not only achieved the recognition we deserve for the hotel, but also for Wales, which provides such high quality local produce from fresh lobster to Welsh Black Beef and the famous Welsh Lamb so it is fantastic to have Wales and Ynyshir Hall represented in the Michelin Guide.”

Shane forages for much of his produce in the woodlands and gardens around Ynyshir Hall and sources all meat from the valleys surrounding the property.
Shane even leads foraging excursions for guests!

The hotel prides itself on its philosophy of using local produce, sourced from within a couple of miles of the property.

This, combined with the passion of Shane and general manager, Joan Reen, means that Ynyshir Hall is able to offer a unique and superior dining experience.

Joan said: “There’s a wealth of superb, fresh and local ingredients available near Ynyshir Hall and this, mixed with the talent of Shane, makes dining at Ynyshir Hall a first-class experience.

“It is a great feat that we have been awarded the Michelin Star again this year, testament to the efforts of the team to maintain the high standards that are dictated by the Michelin inspectors and criteria year on year.
