HERE is my easy to make vegan quarter pound burger recipe.

Appreciated by all, but loved by vegetarians and carnivores, this recipe is a tasty alternative to the standard burger and an overall winner when it comes to meat free alternatives.

It is made with a collection of nutrient dense foods that collectively put together are a marriage made in heaven - sweet potato, chickpeas and roasted peppers, packed full of flavour with the added zing of spice, paprika, cumin, chilli and a generous measure of fresh coriander.

Low in fat, they are great if you are watching your waistline, or just fancy something a little different.

Serve in a lightly toasted muffin with some low fat cheese and salad... absolutely delicious!

They can be made in advance and also are good to freeze.

I tend to cook them either on the barbecue or in the oven.

Sweet potato with roasted pepper quarter pound burgers

Prep time: 25 minutes.

Cooking time: 20 minutes on 200C.

Serves: 4.

Ingredients:

150g of baby mixed peppers.

270g (cooked weight) large sweet potato.

100g of tinned chickpeas.

100g porridge oats.

1 onion - small, roughly chopped.

1 clove of garlic.

1tsp lazy chilli.

1tsp cumin.

2tsp of paprika.

Handful of fresh coriander.

Frylight spray (5 pumps).

Method:

Preheat the oven to 200C

Prepare your sweet potato, by peeling and cutting into 3cm sized chunks.

Add the peppers and the prepared sweet potato to a bowl and spray over the fry light, so that the ingredients are equally covered.

Place on a baking tray and cook in the oven for 20 minutes.

In a food processor, add all of the ingredients and blend for approximately one minute to a softish consistency.

Using your hands, take a small handful of the ingredients and roll it into balls, then flatten to shape into burgers approx an inch-and-a-half thick.

Cook on a non-stick baking tray for 20 minutes, turning halfway through cooking.

Serve in a lightly toasted muffin, with salsa, guacamole, salad and low fat cheese.
