It might not be your top choice of fruit to turn into a tipple but one North Wales businesswoman is giving the gooseberry its moment in the spotlight.

Katharine Wilding is the owner of Angel Feathers, a small holding located on the hillside of Moel Famau.

Here she grows various fruits, creating a range of spirits, initially vodka and gin, with no added sugar and without any artificial ingredients.

It was during the first lockdown that Katharine thought about expanding into rum.

Without anyone to readily sample what Angel Feathers produced, she set about making Moel Famau Spiced Apple Rum.

When outlets started to open again, the rum was instantly on the shelves.

Katharine took her rum to local food festivals and was blown away by the response. The first batch sold out, so Angel Feathers increased the production in 2021.

It was on the back of the responses to the Moel Famau Rum, that she set about making another rum.

Katharine, a lover of gooseberries, had been growing a sweeter, red variety for a few years and decided to try and use them in a spiced gooseberry rum.

She researched the availability of fruit rum and cannot find another like it.

She said: "There appears to be no gooseberry rum on the market, especially in the category of lightly spiced rum and one that is not full of sugar or artificial flavours.

"It has a mellow fruity taste with hints of vanilla and spices. This variety of gooseberry is much sweeter than the big hairy green variety - I have to stop myself from eating them straight off the bushes!"

Angel Feathers is currently finishing off a small pre-launch batch of this new spirit, which is expected to be ready in the spring.

Katharine, who is always looking for something new, said: "I need to finish this before I start my new and exciting project later in the year..."
